Ethiopia is where coffee began, and Yirgacheffe is where it still does its most interesting work. This Catimor variety grows at 1,150 meters in the Sidamo region — an elevation that builds slow, dense beans with the kind of complexity that a natural process brings fully to life. Left to dry in the sun with the fruit intact, the bean absorbs the cherry's sweetness before it ever sees heat.

Mitchell's roasts this one dark — a deliberate choice that transforms the fruit's brightness into something deeper and more brooding. The citrus doesn't disappear; it chars at the edges into something bittersweet. The berries pull back and settle into the finish. The caramel holds it all together.
